Classic Beef Wellington with Madiera wine sauce- Tender Filet Mignon topped with a duxelle then wrapped in a rich dough and baked to a golden brown.  Served with a Madeira wine sauce.

Grilled Flank Steak with Peanut Sauce- This Flank Steak is marinated with Thai inspired flavors then grilled and served with a spicy peanut sauce.

Salisbury Steak with Gravy-
Tender ground beef steaks served with an onion and mushroom gravy.

Fish and Seafood

Garlic and Lemon Shrimp & Orzo-
Shrimp and orzo pasta in a lemon, garlic and white wine sauce.

Fresh Fish Fillet En Papillote with Julienne Vegetables- Fresh Fish Fillets prepared in a parchment paper pouch with finely sliced fennel, carrots, zucchini or other fresh vegetables.

Fish Vera Cruz- Fillets of Talapia or Snapper cooked in a salsa based sauce.

Grilled Fish in Foil- Fresh Fish seasoned with citrus dill butter and added to a  bed of thinly sliced onion; then wrapped for you to grill.

Pacific Rim Salmon- seasoned with cumin, garlic, pepper and soy sauce.

Crab Cakes with Zesty Aioli- crab cakes are made with traditional ingredients and served with a zesty aioli.

Tilapia Baked in Couscous- Tilapia fillets, baked in couscous with lemon, cumin and sun-dried tomatoes.

Pork

Herb Roasted Pork Tenderloin Roast- Pork tenderloin rubbed with seasonings and slow cooked in a sweet soy sauce.

Pork Medallions Dijon- Cubes of pork sauteed until golden brown and served in a tangy cream sauce.

Roast Pork Tenderloin with Dried Cherries and Rosemary- Pork tenderloins marinated then roasted in a red wine, rosemary and balsamic vinegar sauce.

Slow Cooker Pulled Pork BBQ- This recipe speaks for itself if you love BBQ!!!

Pork Tenderloin with Apples and Prunes- Pork tenderloin (may substitute boneless porkchops) with sauteed shallots, apple slices and prunes.

Oven Barbeque Spareribs-
These ribs are slow cooked and spicy!

Poultry

Chicken in Apricot Sauce- Chicken breast sauteed with onion, red bell peppers and dried apricots.

Chicken Pomodoro- Tender chicken cutlets with a light tomato cream sauce.

Coq au Vin- A classic French chicken dish..... Chicken is braised in wine sauce.

Raspberry Mustard- Crusted Chicken Breast- Thin chicken breasts coated with raspberry honey and sauteed. Served with a balsamic fig drizzle sauce.

Cajun Chicken Pasta- Spicy chicken in a creamy mushroom sauce and served over rotini pasta.

Southern Oven Fried Chicken- Chicken pieces dipped in buttermilk, breaded and oven fried.
